    Twinkies - Deep Fried

    Fried Twinkies


    6 Twinkies, refrigerated
    All-purpose flour
    Fat for deep frying

    Batter:

    1 cup all-purpose flour
    1 tablespoon malt vinegar
    1 teaspoon baking powder
    1 teaspoon salt
    12 ounces water

    Coulis:

    1/4 cup EACH frozen raspberries, blackberries, strawberries and blueberries
    1 tablespoon sugar
    Garnish: Confectioners' sugar

    Recipe


    Mix batter ingredients until batter is the consistency of a custard.

    Roll a chilled Twinkie in flour, then roll in batter.

    Drop the battered Twinkie into deep fat which has been heated to 400 degrees; fry for about two minutes, just until the filling is starting to melt and the outside is a nice golden brown.

    Continue with remaining Twinkies.

    Top with confectioners' sugar; cut in half on the bias and serve with the four-berry coulis.

    To make the coulis:

    Put frozen berries into a pan on low heat with the 1
    tablespoon sugar.

    Bring the mixture to a boil, then pour into a blender and
    process.

    Then push the pulp of the berries through a sieve.
