    Tomato Apple Chutney


    5 lbs (2.3 kg) ripe tomatoes, peeled & diced
    6 cups (1.5 L) tart apples, pared
    2 large onions, chopped
    1 lb (455 g) seedless raisins
    2 garlic cloves, minced
    1 lb (455 g) dark brown sugar
    1 tablespoon (15 ml) salt
    2 teaspoons (10 ml) chilies, crushed
    1 tablespoon (15 ml) cinnamon
    1 teaspoon (5 ml) allspice
    1/2 teaspoon (2 ml) ginger
    1/2 teaspoon (2 ml) cloves
    2 cups (500 ml) cider vinegar

    Recipe




    Combine all the above ingredients in a large saucepan.

    Bring to a boil over high heat, stirring constantly.

    Cover & simmer for 10 minutes.

    Uncover & continue to simmer,stirring often; 30 minutes longer or until thick.

    Ladle the mixture into not sterilized sealers & seal.

    Serves 48
