Dessert Crepes with Easy Fudge Sauce
5 eggs
1 qt. milk, divided
3 generous c. flour
1/4 c. sugar
1 tsp. best quality vanilla
1/2 c. melted margarine or butter
Easy Fudge Sauce
3/4 c. cocoa
1 c. sugar
1 c. light corn syrup
1/2 c. cream
2 tbsp. butter
pinch salt
1 tsp. vanillaRecipe
Combine eggs, 2 c. milk, flour, sugar and vanilla. Beat until completely smooth. Stir in melted butter until barely combined, then remaining milk.
In preheated non-stick pan, put in enough batter to cover the bottom of pan. Cook until edges brown and surface looks dry. Turn and cook for 30 seconds more.
To serve, fill with any desired filling (we use a Bavarian crème) and top with your favorite topping.
Easy Fudge Sauce
In medium heavy saucepan, combine sugar, salt and cocoa. Whisk until smooth and combined. Stir in cream, corn syrup and butter. Bring to boil, stirring constantly. Reduce heat to simmer and simmer for 5 minutes. Stir in vanilla.
Can be stored in refrigerator, tightly covered, for up to 3 weeks.
