    This recipe for mashed zucchini with chiles & cheddar embraces zucchini's tendency to become very soft when cooked.

    List of Ingredients




    Zucchini Chile-Cheddar Mash (healthy)


    1 tablespoon canola oil
    1 1/4 lbs zucchini (2-3 medium), halved lengthwise & sliced
    1 medium onion, chopped
    1 - 4 oz can diced green chiles, drained
    1/4 teaspoon salt
    1/2 cup grated extra sharp cheddar cheese

    Recipe




    Heat the oil in a large non-stick skillet over medium heat.

    Add the zucchini & onion, stirring to coat.

    Cover & cook, stirring occasionally, until the vegetables are very soft & lightly browned; about 12 to 15 minutes.

    Stir in the chiles & salt.

    Cook until the chiles are heated through, 1 minute more.

    Transfer the mixture to a medium bowl.

    Mash with a potato masher until chunky, not completely smooth.

    Stir in the cheese & serve immediately.
