Cherry White Chocolate Scones
1/3 cup granulated sugar
2 cups all-purpose flour
2 tsp baking powder
½ tsp salt
¼ cup unsalted butter, chilled
1 large egg
½ cup heavy cream
1 ½ tsp vanilla extract
½ cup dried cherries (chopped)
3 ounces white chocolate chips

Preheat oven to 375 °F.
In a large bowl, stir together the flour, sugar, baking powder, and salt. Cut the butter into ½-inch cubes and distribute them over the flour mixture. With a pastry blender, cut in the butter until the mixture resembles coarse crumbs. In a small bowl, stir together the egg, cream, and vanilla extract. Add the egg mixture to the flour mixture and stir to combine. With lightly floured hands, knead in the cherries and white chocolate until evenly distributed (be careful not to overwork dough).
Pat dough into a 1 inch thick circle and cut with a 2 ½ inch biscuit cutter. Place on cookie sheet lined with parchment wire rack for 5 minutes. Serve warm, or cool completely and store in an airtight container.
Bake for 15 to 20 minutes, until lightly browned
