No-Bake Cornflake Cookies


1 oz white chocolate, chopped
Pinch of salt
2 tbs each molasses and corn syrup
2 cups cornflakes
1 oz semisweet chocolate, chopped
2 tbs heavy cream
6 tbs unsalted butter
1/2 cup pecans



Recipe


Toast pecans in a skillet.

Transfer to a cutting board, let cool, then chop.

Line 2 baking sheets with parchment.

Toss pecans and cornflakes in a bowl.

MAKE CARAMEL

Bring butter, molasses and corn syrup, cream and salt to a boil in a saucepan, cook until mixture comes together into a loose ball.

Remove from heat.

Once caramel stops bubbling, stir in semisweet chocolate until melted.

Pour chocolate caramel over cornflake mixture, toss to coat.

Scoop tablespoonfuls of mixture onto baking sheets.

Let set 1 hour.

Put white chocolate in a microwave bowl, microwave in 30 second intervals until melted.

Drizzle over cookies, let set 1 more hour, then SERVE...
