    Angel Hair with Arugula & Roasted Tomatoes


    One pound of imported angel hair
    8 oz. extra virgin olive oil
    4 cloves of garlic sliced
    6 tomatoes coarsely chopped
    Salt and pepper to taste
    Red chili flakes (optional)
    Choice of grated parmesan or pecorino
    2 cups full fresh arugula – thrown in at last minute

    *Roasted tomatoes

    20 ea. Roma tomatoes, quartered
    6 oz. olive oil
    1 tsp. dry oregano
    1 tsp. fresh rosemary, chopped
    ½ cup whole peeled garlic cloves
    Salt & pepper

    Recipe




    Toss Roma tomatoes with olive oil, fresh herbs and whole garlic.

    Place on sheet pan and back at 275F for approximately 2 hours.

    May be used immediately, or will last two days if properly refrigerated.

    Serves 4
