    Bow-Ties with Boursin


    8 ounces bow-tie pasta
    2 cups broccoli florets
    2 tablespoons butter or margarine
    1/2 pound boneless, skinless chicken breasts, cut into thin strips or cubed
    1 small red bell pepper, cut into thin strips
    1 cup low-sodium chicken broth
    4 to 6.5 ounces garlic and herb soft-spread cheese, such as Boursin

    Recipe




    Bring a large pot of water to a boil over high heat. Add the bow ties and cook according to package directions. Add broccoli florets during last 4 minutes of cooking. Drain and set aside.

    While the pasta is boiling, melt the butter or margarine in a large skillet over medium-high heat. Add the chicken and red bell peppers and cook until chicken is done, about 5 minutes.

    Add the chicken broth and bring to a boil. Reduce heat and stir in the cheese spread. Add the bow ties and broccoli, stirring well to coat with the sauce.

    Makes 4 servings.
