Mint Pea Pasta
1 pound gemelli pasta
1/2 tsp salt
2 tsp lemon zest
1/2 cup sliced almonds
2 cups mint
1/8 tsp pepper
2 tbs Pecorino Romano cheese
1 tbs lemon juice
1/4 cup plus 2 tbs olive oil
14.4 oz bag frozen peas
Recipe
Bring a pot of salted water to a boil.
Add peas, blanch 30 seconds.
Remove from pot, run under cold water until cool, set aside.
Reserve water.
In a food processor or blender, combine 1 1/2 cups peas, mint, oil, 1/4 cup almonds, lemon juice and lemon zest.
Process until combined.
Transfer to a bowl, stir in cheese, salt and pepper.
Bring reserved pot of water to a boil, add pasta.
Cook according to package directions.
Add pesto to a pan over heat.
Drain pasta, reserving 1 cup water, transfer pasta to pan.
Stir in water and remaining peas and almonds.
SERVE immediately
