MUSHROOM KALE PASTA
1/8 tsp nutmeg
1 tsp salt
3 tbs flour
1 shallot, finely diced
6 tbs unsalted butter
1/4 tsp pepper
3 cups milk
12 oz kale, stems removed, thinly sliced
1 1/2 pounds mushrooms, sliced
1 pound pasta
Recipe
Bring a pot of salted water to a boil.
Cook pasta according to package directions.
Drain, set aside.
Melt 3 tbs butter in a pan.
Add mushrooms and shallot, cook until most of the liquid is absorbed.
Add kale, until wilted and slightly tender.
In pot, melt remaining butter.
Add flour, cook 2 min.
Pour in milk.
Bring to a simmer, cook until thickened.
Stir in salt, pepper and nutmeg.
Stir mushroom kale mixture and pasta into sauce and SERVE...
