Saucy Bacon Pasta
2 tbs grated Parmesan cheese
1/4 tsp each salt and pepper
1/2 cup vodka or broth
15 oz can diced tomatoes
2 tbs oil
1/2 cup heavy cream
2 tsp sugar
1/4 cup basil, chopped
28 oz can crushed tomatoes in puree
1 onion, finely chopped
6 oz pkg Canadian bacon, diced
1 pound box small shaped pasta
Recipe
Bring a pot of lightly salted water to a boil.
Add pasta, cook per package directions.
Drain, return to pot.
Heat oil in a skillet.
Add bacon, brown on both sides.
Remove to a plate.
Reduce heat, add onion to skillet.
Cook 5 min.
Stir in tomatoes, vodka, basil, sugar, salt and pepper, bring to a simmer.
Cook 8 min.
Add bacon back to skillet along with cream.
Heat through, spoon over pasta.
Top with Parmesan, then SERVE with garlic bread...
