    Saucy Mushroom Pasta


    Salt and Pepper
    1 pound rigatoni rigate pasta
    Handful dried porcini mushrooms
    1 1/2 cups chicken stock
    3 tbs oil
    2 tbs butter
    3/4 pound mixed mushrooms, sliced
    1 cup milk
    1 carrot, grated
    1 onion, chopped
    4 cloves garlic, sliced
    2 tbs chopped thyme
    8 sage leaves, sliced
    1 bay leaf
    1/4 cup tomato paste
    1/2 cup white wine or broth
    Handful grated Parmesan cheese

    Recipe




    Bring a pot of salted water to a boil, add pasta, cook until al dente.

    Drain, reserving 1 cup pasta cooking water.

    In a saucepan, cover porcinis with stock.

    Bring to a simmer.

    Drain, reserving stock, coarsely chop.

    In a skillet, heat oil.

    Add butter to melt.

    Add mixed mushrooms, cook until browned.

    In another saucepan, heat milk to a simmer.

    Remove from heat.

    Add carrots and next 5 ingredients to mixed mushrooms, season with salt and pepper, cook 5 min.

    Stir in tomato paste 1 min.

    Stir in wine, porcinis, 1 cup porcini stock and milk, simmer.

    Add pasta and reserved pasta water to sauce.

    Stir in cheese, then SERVE...

    MAKES 4 SERVINGS.
