Yummy lasagna with sauce, spinach, sausage and cheese.

Italian Lasagna
1 onion
2 tbs olive oil
4 cups ricotta cheese
2 cups each shredded mozzarella cheese and spinach, chopped
24 oz jar four cheese pasta sauce
1 egg
1 tsp dried oregano
2 cloves garlic, chopped
1/2 cup grated Parmesan cheese
12 lasagna noodles, uncooked
16 oz pkg Italian ground sausageRecipe
BRING a pot of salted water to a boil.
Cook pasta until al dente.
Drain, lightly oil and set aside.
In a saucepan, saute sausage crumbling until no longer pink.
Add onion and garlic, saute until sausage is cooked through.
Add pasta sauce to mixture, set aside.
In a bowl, blend ricotta cheese, egg, 1/4 cup Parmesan cheese and spinach, set aside.
Coat a 13x9" baking dish with oil, spread 1 cup of sauce mixture on bottom.
Top with 3 lasagna noodles.
Spread 1/4 ricotta cheese mixture on noodles, layer on 1 cup sauce mixture.
Sprinkle 1/2 cup mozzarella cheese on top.
Repeat process 3 more times, starting with noodles and finishing with remaining Parmesan cheese.
Sprinkle with oregano.
Heat oven to 350 degrees.
Bake 45 min.or until hot and bubbly.
Let stand 10 min. before cutting, then SERVE with garlic bread if desired...
