    Three Cheese Lasagna


    2 lbs. ground beef
    1/2 cup chopped onion
    one 6.4 oz. pkg. lasagna dinner mix (hamburger helper)
    2 1/4 cups hot water
    two 14 1/2 oz. cans diced tomatoes, undrained
    one 10 oz. pkg. frozen chopped spinach, thawed & squeezed dry
    1 cup sliced fresh mushrooms
    1/2 cup chopped green onions
    1 cup (8 oz.) cottage cheese
    1/4 cup grated parmesan cheese
    1 1/2 cups (6 oz.) shredded mozzarella cheese

    In a large skillet, cook beef, onion over medium heat 12-14 minutes or until meat is no longer pink; drain.

    Stir in pasta from dinner mix, contents of seasoning mix, water, tomatoes, spinach, mushrooms, onions.

    Bring to a boil.

    Reduce heat; cover, simmer 10-13 minutes or until pasta is tender.

    Stir in cottage cheese, parmesan cheese.

    Transfer to 2 greased 8" square baking dishes.

    Sprinkle with mozzarella cheese.

    Cover, freeze 1 casserole up to 3 months.

    Cover, bake remaining casserole at 350 for 15-20 minutes or until bubbly, cheese is melted.

    To use frozen casserole.

    Remove from freezer 30 minutes before baking, do not thaw.

    Cover, bake at 350 for 1 hour.

    Uncover; bake 15-20 minutes longer or until heated through.
