    Bacon Spaghetti


    1 pound wheat spaghetti
    6 slices bacon, diced
    3/4 cup grated Parmesan cheese
    1 1/2 tsp pepper
    1 tbs flour
    2 eggs plus 2 egg yolks
    1/2 tsp salt
    1 cup lowfat milk

    Recipe




    BRING a pot of lightly salted water to a boil.

    Add spaghetti, cook per package directions.

    Drain, reserving 1 cup pasta water.

    Add bacon to a pan.

    Cook until slightly crispy.

    Drain on paper towels, reserving 2 tbs drippings.

    Blend milk, eggs, egg yolks and salt.

    Heat bacon drippings.

    Whisk in flour, cook 1 min.

    Pour in milk mixture, whisking constantly.

    Cook until thickened.

    Remove from heat, whisk in 1/2 cup cheese.

    Toss pasta with sauce, bacon, remaining cheese and some of the pasta water.

    Sprinkle with pepper just before serving with wheat garlic bread if desired,

    Makes 6 servings
