Saucy Mushroom Pork Chops
1/2 tsp thyme leaves
1/2 cup beef broth
1 shallot, sliced
2 bone in pork chops
1 1/2 tbs butter
1 tsp Dijon mustard
1/4 cup red wine
Salt and Pepper
4 oz mushrooms
Recipe
In a skillet, melt 3/4 tbs butter.
Add mushrooms, cook until browned.
Transfer mushrooms and juices to a plate.
Pat pork dry, season with salt and pepper.
Add to skillet, cook until pork is browned on both sides.
Transfer pork to plates, keep warm.
Add shallot to skillet, cook until softened.
Stir in wine, boil until reduced by half.
Stir in broth, boil until thickened slightly.
Stir in mustard, thyme and remaining butter until melted.
Add mushrooms back to pan, turn off heat, let sit until heated through, season with salt and pepper.
Return pork chops to skillet, then SERVE...
