    Battery Acid Chicken


    Boneless chicken breasts
    Wine for marinating (any wine is fine. Pinot Grigio works nicely)
    2 cans Cream of Mushroom Soup
    3 or 4 Large Portabello Mushrooms
    1/2 cup grated Parmesan (Cheddar works too, but use significantly less,about 1/4 cup)
    Garlic (clove or two)
    Paprika (pinch or two)
    1 tblsp Honey
    2 tblspn Butter
    2 tblspn Olive Oil

    Recipe




    In a dish suitable for marinating, mix softened butter, honey, wine and garlic.

    Be generous with the wine as the alcohol will cook off.

    Slice your chicken in strips, add them to the mixture,and marinate for a few hours.

    The longer it marinates, the better (overnight is great if you have the time)

    After soaking yer bird, coat a glass baking dish with the olive oil, and toss in all of the chicken and the marinade.

    In the glass baking dish, add chopped Portabellos, Cream of Mushroom Soup, Parmesan, Paprika (and your choices of additional spicing. Experiment.)

    Bake at 300F for about an hour and fifteen minutes.

    You'll find that lowering the temp and extending the cooking time makes the chicken far more tender.

    This can be served over your favorite pasta.

    (Note: The reason for not marinating the chicken in the same dish is because if you add the olive oil before the soaking, it tends to flatten the flavor).
