Lemon Sesame Chicken
4 boneless skinless chicken breasts
1 egg white
2 Tbsp vegetable oil
1 onion, halved, then sliced about ¼ inch
1 tbsp brown sugar
Finely grated lemon zest and juice of one lemon
3 Tbsp lemon curd(making ½ of the following recipe makes exactly enough for this recipe)
7 oz can sliced water chestnuts, drained. Recipe
Place chicken breasts between 2 sheets of plastic wrap and pound with a meat mallet or rolling pin to flatten.
Slice the chicken into thin strips.
Whisk egg until light and foamy.
Dip chicken strips into the egg white, then coat with sesame seeds.
Heat oil in wok or heavy skillet and stir fry the onion for 2 minutes until softened.
Add the chicken to the wok and stir fry for 5 minutes, or until it turns golden brown.
Mix sugar, lemon zest, lemon juice and lemon curd and add to wok.
Allow it to bubble and thicken.
Add water chestnuts and cook for 2 minutes.
Garnish with more lemon zest if you like, and serve over rice.
