    Sweet and Sour Chicken


    4 skinless, boneless chicken breasts
    2 egg yolks
    2 tbs- cornstarch
    Vegetable oil
    The Sauce:

    1 chopped onion
    1 diced small red pepper
    1 diced small orange pepper
    1 can- pineapple chunks in natural juice
    1 tbs- cornstarch
    2 tbs- ketchup
    2 tbs- light soy sauce
    1 tbs- white wine vinegar
    Fresh cilantro leaves
    Salt and pepper

    Recipe




    Mix the egg yolks, 1 tbs of water, cornstarch, and salt and pepper to taste.

    Heat two inches of oil in a frying pan.

    Put the chicken cubes in the cornstarch mixture and then fry in batched of five minutes or until the cubes are crisp and golden. Drain on paper towels.

    Empty the oil from the pan, leaving a thin coating. Stir- fry the onion and peppers over a high heat for a few minutes, tossing them to prevent them from burning or sticking to the pan.

    Drain the pineapple cubes (setting the juice aside) and add them to the pan.

    Use a little of the pineapple juice with some cornstarch to make a paste. Add the paste to the pan with the remaining juice. Add the ketchup, soy sauce, and vinegar to the pan. If the mix is dry, add 1/2 cup of water. Raise the temperatures and stir until thickened.

    Add the chicken cubes and let simmer for five minutes or until cooked through.

    Serve with rice with cilantro leaves as a garnish.
