Easy Crisp Oven Fried Chicken
1 broiler-fryer -- cut into serving pieces
1/3 cup melted butter
2 teaspoons salt (we think 2 tsp is too much.
1/4 teaspoon pepper
2 cups crushed cornflakeRecipe
Dip chicken pieces in melted butter, sprinkle with salt and pepper, then roll in cornflakes
Place skin side up in foil lined pan.
Sprinkle with remaining butter and cornflakes.
Bake in moderate oven (375 degrees) about 1 hour or until done.
Do not turn during cooking.
NOTES : About every cereal manufacturer has hijacked this recipe at one time or another. Few work as well as cornflakes -- Don't bother with others.
