    Honey Chili Chicken Wings


    4 lbs chicken wings
    1/4 cup extra-virgin olive oil
    salt & freshly ground pepper
    1/4 cup unseasoned rice vinegar
    1 teaspoon crushed red pepper, or to taste
    1/2 cup honey
    2 tablespoons of soy sauce
    2 scallions, thinly sliced

    Preheat the boiler & set a rack in the center of the oven.

    In a large bowl, toss the chicken wings with the olive oil & season with salt & pepper.

    Arrange the wings on a wire rack set over a large, sturdy baking sheet.

    Broil for 45 to 50 minutes, turning once or twice, until the wings are cooked through & crisp.

    Watch carefully so they don't burn.

    Meanwhile, in a saucepan, combine the vinegar, crushed red pepper, honey & soy sauce.

    Simmer for 3 minutes to create a thicker consistency.

    In a large bowl, carefully toss the chicken wings with the honey-soy mixture.

    Transfer the wings to a platter, sprinkle with the scallions, then serve immediately.
