Meatless Chickpea Pot Pies
15 oz can garbanzo beans or chickpeas, drained
2 cups frozen mixed vegetables, thawed
1 sheet pie pastry
1/4 cup heavy cream
3 cups vegetable broth
1/2 tsp salt
2 garlic cloves, minced
1 onion, chopped
3/4 tsp Italian seasoning
1 1/4 cups frozen cubed hash brown potatoes
1/4 tsp pepper
6 tbs flour
6 tbs butter
Recipe
Saute onion in butter in a saucepan until tender.
Add garlic, cook 1 min. longer.
Stir in flour, salt and pepper until blended.
Add broth, bring to a boil.
Cook until thickened.
Stir in vegetables, chickpeas, potatoes, cream and Italian seasoning.
Divide mixture among four ungreased ramekins.
Unroll pastry, divide into four portions.
Roll out each portion to fit ramekins, place pastry over filling.
Trim, seal and flute edges.
Cut slits in pastry.
Place ramekins on a baking sheet.
Bake at 400 degrees for 30 min. or until pastry is golden brown, then SERVE...
