    Mexican Pot Pie


    1 pound ground beef or turkey, thawed
    1/2 cup diced onions
    1/4 cup diced bell pepper
    1 packet taco seasoning mix
    1 can diced tomatoes
    1 cup bottled chunky salsa
    1 can Mexican whole kernel corn, with juice
    1 small can diced chili peppers, optional
    1 box corn muffin mix, prepared to batter stage
    1 bag grated Colby-jack or Mexican mix cheese

    Recipe




    Preheat oven to 375 F.

    Grease an 8 x 10-inch glass baking dish and set aside.

    Brown ground beef in large skillet with diced onion, bell pepper and taco seasoning mix.

    Add canned tomatoes, salsa, corn, and chili peppers, if using.

    Blend well then set aside to cool.

    Prepare corn muffin mix per box instructions just to batter stage.

    Line bottom of baking dish with half of the batter, spreading it out evenly.

    Dump ground beef mixture on top of batter and spread evenly.

    Top with half the cheese, sprinkling evenly.

    Drop spoonfuls of the remaining batter onto the cheese and spread evenly (a cake frosting tool works well for spreading), working from the center out.

    Top with remaining cheese and bake at 375 F. for 15-20 minutes, or until the corn muffin batter is baked to golden brown, and the filling bubbles.

    Serves 6-8.
