Chicken And Vegetable Fried Rice
2 cups cooked diced chicken
3 cups frozen stir fried vegetable blend
1 egg
2 egg whites
to taste salt and pepper
1 tablespoon oil
2 garlic cloves, minced
1 teaspoon minced fresh ginger
3 cups cooked rice (refrigerated)
3 tablespoons soy sauce Recipe
In a small bowl, beat egg and egg whites.
Season to taste with salt and pepper.
Spray a wok or large non-stick skillet with no-stick cooking spray.
Heat over medium-high heat.
Add egg mixture; cook until almost set; do not stir.
Remove eggs from skillet.
Add oil, garlic and ginger, cook 1 minute.
Add rice; stir fry 2 minutes.
Add remaining ingredients; reduce heat to medium.
Cover; cook 3 to 4 minutes or until heated through, stirring every minute.
