    Dirty Rice


    1/2 pound chicken gizzards- trimmed and coarse chop
    1/2 pound chicken livers- coarse chop
    2 medium onions -coarse chop
    1 green pepper- coarse chop
    1/2 cup celery-coarse chop
    1 cup white rice
    2 cups cold water
    1/2 cup finely chopped fresh parsley

    Chop in short bursts in a food processor

    Heat 2 T olive oil in cast iron skillet, when hot, add chickenx mixture, salt and pepper. Reduce heat and cook for 1 hour.

    In a one quart pot combine 1 cup of white rice and 2 cups of cold water, bring to a boil and reduce heat to low. Cover rice and cook for 20-25 minutes, until water is evaporated and the grain is tender.

    Remove from heat and allow to rest 10 minutes. Fluff with a fork.

    Gently toss the rice with the chicken mixture thoroughly. Adjust the seasonings and add 1/2 cup of finely chopped parsley.
