Herbed Vegetable Pilaf
1 1/2 Cups white rice
3 Cups water
2 Tbsp. vegetable oil
1/2 Medium onion, sliced
1/2 Cup coarsely chopped potato
1/2 Cup coarsely chopped cauliflower
1/2 Cup sliced carrots
1/2 Tsp. salt
1/2 Tsp. freshly ground pepper
1/2 Cup frozen peas
2 Tsp. chopped fresh basil
2 Tsp. chopped fresh parsley Recipe
In bowl combine rice and water; set aside.
In large saucepan heat oil over medium heat.
Add onion, potato, cauliflower, carrots, salt and pepper.
Cook and stir 1 to 2 minutes.
Add peas; cook and stir 1 minute.
Add rice-water mixture.
Bring to boiling; reduce heat.
Cover and simmer 10 to 15 minutes.
Remove from heat; let stand 5 minutes.
Top with fresh basil and parsley.
