    This gorgeous, colorful slaw bursts with good-for-you ingredients & weighs in at a mere 118 calories per serving. When prepping the beets, wear disposable gloves & an apron to prevent beet juice from staining your fingers & clothes.

    List of Ingredients




    Beet, Carrot & Apple Salad


    zest & juice of 1 orange
    zest & juice of 1 lime
    2 tablespoons sherry vinegar
    3/4 cup extra virgin olive oil
    sea salt & freshly ground black pepper
    1 lb beets, peeled & cut into matchsticks
    2 large carrots, peeled & cut into matchsticks
    1 Granny Smith apple, cored, peeled & cut into matchsticks
    1 turnip, peeled & cut into matchsticks
    1 bunch flat-leaf parsley, stems removed

    Recipe




    In a large bowl, combine the orange zest, orange juice, lime zest, lime juice & sherry vinegar.

    Slowly whisk in the olive oil, then season with salt & pepper to taste.

    In the same bowl, layer the beets, carrots, apple & turnip.

    Season with additional salt & pepper to taste.

    Toss the salad right before serving, then top the salad with parsley leaves.
