Broccoli & Apple Salad
1 small head broccoli
1 apple, diced
1/2 red onion, thinly sliced
8 cherry tomatoes, quartered
1/3 cup (75 ml) dry apple cider
2 tablespoons (30 ml) balsamic vinegar
1/2 cup (125 ml) parsley, chopped
salt & pepper to taste
Recipe
Cut the broccoli into small florets.
Blanche the florets in boiling water for 1 to 2 minutes.
Drain the broccoli & refresh in cold water.
Drain well.
Combine the broccoli with the apple, onion & tomatoes in a serving bowl.
In a small bowl, stir together the apple cider, vinegar & parsley.
Toss the dressing mixture with the vegetables.
Season with salt & pepper.
Serves 6
