    Garden Salad


    1 garlic clove, minced
    3/4 tsp each honey and water
    1 tbs each champagne vinegar and minced shallots
    1/8 tsp pepper
    1 boneless skinless chicken breast half
    1/4 cup each sliced radishes and parsley leaves
    1/2 cup trimmed watercress
    1/2 cup sugar snap peas
    4 tsp olive oil
    1/4 tsp salt
    2 cups torn lettuce
    4 baby carrots, halved lengthwise

    Recipe




    Cook carrots and peas in boiling water until crisp tender.

    Drain, rinse with cold water, drain.

    Combine carrot mixture, lettuce, watercress, radishes and parsley in a bowl, set aside.

    Place chicken between 2 sheets of plastic wrap, pound to 1/4" thickness.

    Sprinkle chicken with 1/4 tsp salt and 1/8 tsp pepper.

    Heat 2 tsp oil in a skillet.

    Add chicken to pan, cook until done.

    Let stand 5 min. cut across the grain into slices.

    Combine remaining oil, salt, pepper, vinegar and remaining ingredients in a bowl.

    Drizzle dressing over lettuce mixture, toss.

    Arrange 2 cups lettuce mixture on each of 4 plates, divide chicken among servings, then SERVE...
