    Grated Carrot Salad


    10 carrots, grated
    2 cucumbers, quartered & sliced
    1/2 cup (125 ml) raisins
    1 tablespoon (15 ml) lemon juice
    1/2 teaspoon (2 ml) ground ginger
    1 tablespoon (15 ml) honey
    1/2 teaspoon (2 ml) ground cinnamon
    1/3 cup (75 ml) olive oil
    pepper to taste
    1/2 cup (125 ml) almonds, slivered

    Recipe




    In a medium sized bowl, place the prepared carrots & cucumbers.

    Add the raisins & stir until mixed.

    In a container with a lid, combine the lemon juice, ginger, cinnamon, honey, olive oil & pepper to taste.

    Shake the container well to combine the dressing ingredients.

    Place the slivered almonds in a small pan.

    Stir over low heat until they are lightly golden.

    Pour the dressing mixture over the salad.

    Garnish with the toasted slivered almonds & serve.

    Serves 6
