Light Vegetable Bulgur Salad
250 ml bulgur 1 cup
25 ml green onion, finely chopped 2 tbsp
1 garlic clove, minced 1
125 ml corn kernels 1/2 cup
1 tomato, seeded & diced 1
1 small zucchini, diced 1
75 ml feta cheese, crumbled 1/3 cup
50 ml italian dressing 1/4 cup
- pinch dried basil -
- salt & pepper to taste -
Recipe
Cover bulgur with 2 cups (500 ml) boiling water; let stand 30 minutes.
Drain.
In bowl; combine bulgur, onion, garlic, corn, tomato and zucchini; stir in cheese, dressing and basil.
Season with salt and pepper to taste.
Cover and refrigerate at least 1 hour.
Serves 6
