    Minted Cabbage Salad


    375 ml plain yogurt 1 1/2 cup
    10 ml clear honey 2 tsp
    2 carrots, sliced 2
    2 green onions, chopped 2
    1/2 head cabbage, finely shredded 1/2
    175 ml sultanas 3/4 cup
    125 ml cashew nuts 1/2 cup
    16 red grapes, halved 16
    2 ml salt 1/2 tsp
    5 ml fesh mint, chopped 1 tsp
    4 mint sprigs to garnish 4

    Recipe




    Using a fork; beat yogurt in a bowl with honey.

    Mix together carrots, onions, cabbage, sultanas, nuts, grapes, salt and chopped mint.

    Pour yogurt mixture over salad ingredients and lightly toss together to mix.

    Either chill the salad in the fridge for several hours or until required or transfer to a large serving dish and serve at once.

    Garnish with fresh mint sprigs.

    Serves 4
