    Quick n' Easy Corn Salad


    2 cups frozen sweet corn, simmered in water for 5 minutes, drained
    3/4 c. celery, small dice
    1/4 c. green pepper, small dice
    1/4 c. pimiento, diced
    2 TBL yellow onion, minced

    Dressing

    1/4 c. apple cider vinegar
    1/4 c. salad oil
    1 1/2 tsp. sugar
    salt & pepper to taste

    Recipe




    Toss the vegetables in a medium bowl with a lid.

    In small saucepan over medium heat, bring dressing ingredients to a boil.

    Pour dressing over vegetables and toss to coat evenly.
    Marinate in the fridge 4 hours or overnight.

    Makes 4-6 servings.
