    Frog Eye Salad


    1 1/2 C pineapple juice
    10 oz, miniature marshmallows ( I omit this)
    2 Cans mandarin oranges
    1 cup white sugar
    1 large can crushed pineapple ( you can use the tidbits)
    8 oz. Cool Whip
    1 pkg. Acini de Pepe pasta
    2 to 3 eggs

    Optional: Unsweetened organic Coconut about 1/3 cup or so.Canned Sliced peaches to decorate on top of the mixture.

    Prepare acini de pepe according to package, drain. Mix sugar, eggs, pineapple juice.

    Bring to a boil over medium heat. Stir until thick, cool a bit, mix with the pasta.

    Refrigerate overnight.

    Just before serving add pineapple, coconut ( optional), mandarin oranges, marshmallows , cool whip mix together then this is optional, top with sliced peaches.

    Note: Be sure to start this all the night before if not allow at least 4 hours for all to chill thoroughly.
