    Mexican Greern Rice With Chicken And Avocao


    1 1/2 cups cooked rice
    1 (15-ounce) can rinsed black beans
    1 cup chopped tomato
    1 cup shredded lettuce
    1/4 cup chopped fresh cilantro
    3 tablespoons reduced-fat oil and vinegar salad dressing, divided
    1 1/2 cups diced chicken
    1 ripe avocado, halved and then cut into cubes

    Recipe




    In a large bowl, combine rice, beans, tomato, lettuce, cilantro and half the salad dressing; toss.

    Arrange on a platter, lined with lettuce if desired.

    In the same bowl, combine chicken, avocado and remaining half of dressing.

    Spoon over rice salad.


    Per serving: 372 calories, 25 grams protein, 13 grams fat (32 percent calories from fat), 2.2 grams saturated fat, 38 grams carbohydrate, 46 milligrams cholesterol, 499 milligrams sodium, 10 grams fiber.
