    New Wave Potato Salad


    8 potatoes
    1 cup (250 ml) green onions, chopped
    3/4 cup (175 ml) dill pickle, chopped
    2 tablespoons (30 ml) vinegar
    salt & pepper to taste
    1 teaspoon (5 ml) dry mustard
    1 teaspoon (5 ml) sugar
    3/4 cup (175 ml) sour cream
    1/4 cup (60 ml) salad dressing
    2 teaspoons (10 ml) dijon mustard
    4 hard boiled eggs, finely chopped
    paprika

    Recipe




    Cook the potatoes in boiling water until done.

    Peel & dice the potatoes.

    Then, transfer them to a large bowl.

    To the same bowl the potatoes are in, add the green onions, pickles, salt to taste, pepper to taste, dry mustard & sugar.

    Toss well.

    In a small bowl, combine the sour cream, salad dressing, Dijon mustard & chopped eggs.

    Toss with the potato mixture & adjust your seasonings to your own taste.

    Refrigerate for 1 hour.

    Sprinkle with paprika before serving.

    Serves 8
