Garlicky Gourmet Grilled Cheese Sandwiches (BBQ)
1 head garlic
2 tablespoons olive oil
4 cups sliced shiitake mushrooms
kosher salt & freshly ground pepper, to taste
4 roma tomatoes, halved
2 lemons, quartered
1 teaspoon truffle oil
2 tablespoons Sriracha sauce
12 large slices sourdough bread
6 tablespoons dijon mustard
6 cups grated extra sharp white cheddar cheese
6 ozs brie cheese
3 cups chopped arugula
Recipe
Preheat the grill to medium heat.
Slice the top from the head of garlic, place the garlic on a double thickness sheet of foil.
Then, drizzle it with olive oil & wrap it tightly.
Roast the garlic on the upper rack of the oven for 60-75
minutes.
While the garlic is roasting, make the sandwich fillings:
Spray the mushrooms with cooking spray & sprinkle with salt & pepper.
Grill the mushrooms, tomatoes & lemons over medium heat,
turning once, for 5-7 minutes or until browned.
Slice the mushrooms & place them in a medium bowl, then drizzle with truffle oil.
Squeeze the lemons into a large bowl, whisking in the Sriracha.
Dice the tomatoes & stir them into the lemon Sriracha mixture.
Then drain any excess liquid in a colander.
When the garlic is done roasting, squeeze our the cloves & mas them with a fork.
Spread equal amounts of the roasted garlic on 6 of the bread slices.
Spread one tablespoon of dijon mustard on each of
the remaining 6 bread slices.
On each of these slices, add equal amounts of cheese.
Top the cheese with equal amounts of arugula,
tomatoes & mushrooms.
Top them with the garlic bread slices.
Grill the sandwiches for 2-3 minutes per side, or until golden brown.
