Buffalo Chicken Sub Sandwiches
FOR THE SUBS---
1 cup crumbled blue cheese
36" loaf wheat French bread
2 tomatoes, seeded, diced
2 stalks celery, diced
2 carrots, diced
1 cup Buffalo wing sauce
1 tbs vegetable oil
1/4 tsp cayenne pepper
2 tsp paprika
1 tbs dark brown sugar
Salt and Pepper
2 pounds skinless boneless chicken thighs
FOR THE RANCH DRESSING---
Salt and Pepper
1/4 tsp Dijon mustard
1/4 tsp honey
1/2 tsp minced dill
1/2 tsp granulated garlic
1/4 cup lowfat buttermilk
3/4 cup light mayonnaiseRecipe
HEAT broiler.
Season chicken with salt and pepper, sprinkle with brown sugar, paprika and cayenne.
Warm oil in a skillet.
Cook half of the chicken in skillet until golden, transfer to a plate.
Cook the rest, then return all chicken to skillet.
Add wing sauce, bring to a simmer, then reduce heat, cook until chicken is done.
Let cool, then shred, return to skillet.
Add more wing sauce if desired, then broil until crisp and caramelized.
Combine carrots, celery and tomatoes in a bowl, season with salt and pepper.
MAKE RANCH DRESSING---
Combine mayonnaise, buttermilk, garlic, dill, honey, mustard, 1/4 tsp salt and a pinch of pepper in a bowl.
Split open bread lengthwise. Put blue cheese crumbles on bottom, then add chicken and veggies.
Cut into small sandwiches
SERVE with ranch dressing on the side...
