    Meatball & Pineapple Hoagies


    1 large (2 cups) sweet onion, halved & sliced
    2 tablespoons olive oil
    1 - 16 oz package frozen cooked meatballs, thawed
    1 cup peeled & cored pineapple, chopped (about 1/4 of the pineapple)
    1 cup desired chutney
    1/4 teaspoon crushed red pepper
    4 hoagie buns, split & toasted

    Recipe




    In a large skillet, cook the onion in the hot olive oil over medium heat for about 8 minutes, or until the onion is tender, stirring frequently.

    Stir the meatballs into the onions, along with the pineapple, chutney & crushed red pepper.

    Cover the skillet & cook for 3 more minutes, or until the mixture is heated through, stirring once.

    Serve the mixture evenly over the 4 split & toasted hoagie buns.
