    Roasted Turkey, Bacon & Avocado Wraps w/ Chipolte Mayonnaise

    Recipe Introduction

    Using precooked bacon saves time when making these turkey wraps for dinner. A smoky mayonnaise sauce adds flavor.

    List of Ingredients

    Roasted Turkey, Bacon & Avocado Wraps w/ Chipolte Mayonnaise


    1 firm-ripe avocado
    2 tablespoons freshly squeezed lime juice, divided
    10 ozs store-bought carved, roasted turkey breast
    6 tablespoons mayonnaise
    1 teaspoon chipolte in adobo sauce or to taste
    4 - 9 to 10 inch flour tortillas
    8 slices precooked bacon (1 3/4 ozs)
    1/2 cup lightly packed cilantro sprigs

    Recipe


    Halve the avocado lengthwise.

    Then, remove & discard the pit.

    Scoop the flesh from the peel with a spoon & slice it lengthwise.

    Transfer the avocado slices to a bowl.

    Drizzle with 1 tablespoon of the lime juice, along with some salt & pepper to taste.

    Toss the turkey in another bowl with the remaining 1 tablespoon of lime juice, along with salt & pepper to taste.

    Stir together the mayonnaise with the adobo sauce, along with salt & pepper to taste.

    Spread the mayonnaise mixture on one side of each tortilla, leaving a 1 inch border.

    Top the mayonnaise mixture with the avocado, turkey, bacon & cilantro.

    Starting with the same side, roll the tortilla tightly to enclose the filling, while folding about 1 1/2 inches of the remaining sides inward to completely encase the filling.

    Diagonally halve the rolled tortillas & serve.

    Makes 4 sandwiches
