    Homemade Lemon Extract (they call it Lemon Aperritif)


    4 or 5 lemons, pick really fresh nice ones, cut in quarters
    1 cup sugar
    1 1/2 cups vodka

    Recipe




    Soak the whole lemons in very hot water for 10 minutes.

    Dry and cut inquarters, over a bowl or plate to catch the juice. Put the quarters into a wide mouth canning jar. Simmer the vodka and the sugar

    in a sauce pan for a few minutes. Pour hot vodka/sugar mixture over the lemons.

    Use a long thin knife to loosen any trapped air bubbles in and around the lemons. Put lid on jar. Put jar in refrigerator for 4 to 6 weeks. Use in cakes, fruit salad, salad dressing, etc.

    Now, the original recipe says to use a vanilla bean, cut in half lengthwise.

    To push it down into the jar after you have poured on the vodka/sugar mixture. I did that the first time I made this and will never do it again.

    It is much better, in my opinion, without the vanilla bean.
