    Chewy Coconut Chocolate Chunk Blondies


    1 cup flour
    1/8 tsp. salt
    4 oz. unsalted butter or margarine, melted, cooled to room temperature
    1 cup light brown sugar, packed
    1 large egg
    1-1/2 tsp. vanilla
    1 cup each flaked coconut, chocolate chips or chunks

    Optional Topping

    1 cup semisweet or bittersweet chocolate chips
    1 tsp. butter or shortening

    Recipe




    Grease and flour an 8x8" or 9x9" baking pan.

    Heat oven to 350°F (175ºC).

    Combine flour and salt; set aside.

    Beat melted butter and brown sugar until smooth; beat in egg and vanilla extract until well blended.

    Slowly beat in flour and salt until blended, then stir in coconut and chocolate chips or chunks.

    Bake 20 - 25 minutes, or until set in the center but still soft.

    Do not over bake.

    Let bars cool slightly before drizzling with chocolate, then cool completely before cutting into small squares.

    Topping:

    If using, melt chocolate chips with 1 tsp. butter until smooth. Drizzle over bars with a spoon or pour mixture into a sandwich bag and cut a very small piece at corner.

    Drizzle, squeezing chocolate out over bars. When cooled completely, slice 1" wide strips, halfway down the pan.

    Makes 18 servings (using 9x9" pan).
