    Soft-Baked Reese's Pieces Butterscotch Cookies


    2 1/4 cups all-purpose flour, spoon, leveled
    1 tsp. baking soda
    1 1/2 tsp. cornstarch
    1/2 tsp. salt
    3/4 cup (1.5 sticks) unsalted butter, melted
    3/4 cup light brown sugar, loosely packed
    1/2 cup granulated sugar
    1 large egg + 1 egg yolk (room temperature egg + egg yolk are preferred. To bring eggs to room temperature quickly, simply place whole eggs into a glass of warm water 10 minutes
    2 tsp. vanilla extract
    3/4 cup butterscotch chips
    1/2 cup reese's pieces

    Toss together flour, baking soda, cornstarch, salt in a large bowl.

    Set aside.

    In a medium size bowl, whisk melted butter, brown sugar, white sugar together until no brown sugar lumps remain.

    Whisk in egg, then egg yolk.

    Finally, whisk in vanilla.

    Pour wet ingredients into dry ingredients, mix together with a large spoon or rubber spatula.

    Dough will be very soft.

    Fold in butterscotch chips, reese's pieces.

    Add-ins may not stick to dough because of melted butter, but do your best to have them evenly dispersed among dough.

    Cover dough, chill at least 2 hours, or up to 3 days.

    Chilling is mandatory.

    I chilled this dough 1 whole day.

    Take dough our of refrigerator, allow to slightly soften at room temperature 10 minutes.

    Preheat oven to 325.

    Line 2 large baking sheets with parchment paper or silicone baking mats.

    Set aside.

    Roll dough into balls, about 3 T. of dough each.

    Dough will be crumbly, but warmth of your hands will allow balls to stay intact.

    Roll cookie dough balls to be taller rather than wide, to ensure cookies will bake up to be thick.

    Put 8 balls of dough onto each cookie sheet.

    Press a few more butterscotch chips or reese's pieces on top of dough balls for looks, if desired.

    Keep 1 sheet of cookie dough balls in refrigerator as you bake 1st batch.

    Bake cookies 11-12 minutes.

    Cookies will look very soft, underbaked.

    Do not bake longer than 12 minutes.

    They will continue to bake on cookie sheet.

    Allow to cool on cookie sheet 10 minutes before moving to a wire rack to cool completely.
