    Potato and Tomato Soup


    15 ml Butter 1 tbsp
    1 Onion, chopped 1
    1 Garlic clove, crushed 1
    4 Tomatoes, sliced 4
    2 Red potatoes, peeled & sliced 2
    25 ml Fresh chives, chopped 2 tbsp
    15 ml Tomato paste 1 tbsp
    5 ml Lemon rind, finely grated 1 tsp
    2 ml Ground thyme 1/2 tsp
    1 Bay leaf 1
    1 L Chicken bouillon 4 cup
    - Ground pepper -
    - Sour cream -

    Recipe




    Heat butter in large pan; add onions and garlic.

    Cook over medium heat until onion is soft.

    Add tomato, potato, chives, tomato paste, lemon rind, thyme, bay leaf and bouillon.

    Bring to a boil, reduce heat and simmer uncovered, for about 20 minutes or until potato is tender.

    Remove from heat, discard bay leaf.

    Allow to cool.

    Place mixture in batches in a food processor.

    Process 30 seconds or until the mixture is smooth.

    Return to pan, season with salt and pepper to taste, heat through.

    Serve topped with a little sour cream.

    Serves 4
