August Corn and Tomato Bisque
2 tbsp. unsalted butter
1/3 cup chopped yellow onion
1/3 cup chopped green bell pepper
1 tbsp. flour
2 cups finely chopped peeled tomatoes
1-1/2 cups half-and-half, scalded or evaporated milk
1 cup kernels fresh or frozen sweet corn
1/3 cup dry white wine
salt & pepper to taste
Fresh parsley, for garnish (optional)Recipe
Melt the butter in a stockpot or large saucepan over med. heat.
Add onion and bell pepper, and saute them until the onion is translucent, 6-8 min.
Reduce the heat to low and stir in flour.
Add the tomatoes, half & half, and corn.
Bring to a simmer over medium heat, but do not boil.
Simmer, uncovered, for 10 minutes.
Add the white wine and simmer 5 min. more.
Season with salt and pepper, taste and adjust seasoning.
Serve hot, garnished with parsley, if desired.
