    Chilled Avocado Cucumber Soup


    2 small or one x-large ripe avocado, peeled, cut up
    2 cucumbers, peeled, seeded and cut up
    1 cup vegetable broth--I use Swanson's canned
    1 cup half-and-half, Silk or evaporated skim milk
    2 Tbsp lime or lemon juice
    1 small sprig fresh basil or tarragon
    Salt to taste

    Garnishes:

    1/4 cup chopped green onions
    1/2 cup chopped tomatoes
    Mint sprigs

    Recipe




    In a food processor or blender, place the avocado, cucumbers, broth, half-and-half, herb and lime juice. Blend until mixture is smooth. Season to taste.

    Refrigerate, covered, until chilled. If soup gets too thick, add more milk or broth. Sprinkle each cup with green onions and tomatoes before serving, and/or garnish with mint sprigs.
