    Meringue Frosting


    1 1/4 cups sugar
    1 1/2 T. corn syrup
    3 T. water
    5 large egg whites, room temperature

    Recipe




    Bring 1 cup plus 2 T. of sugar, corn syrup, water to a boil, stirring constantly.

    Wash down sides of pan with a wet pastry brush.

    Stop stirring, cook sugar syrup until it reaches 230.

    While sugar syrup is cooking, beat egg whites with a mixer until you have soft peaks.

    Beat in remaining 2 T. of sugar.

    Add sugar syrup in a slow, steady stream down side of mixing bowl.

    Beat on high speed until thick, fluffy, cooled, around 7 minutes.

    Frost cake, store in fridge.
