Georgia's Brunswick Stew
2 to 2 1/2 lb. hen, boiled and de-boned (save broth)
1 lb. lean pork (Butt Roast, Loin)
1 lb. lean beef (roast, ground beef, etc.)
3 cans tomatoes
1 can garden peas
1 can cream corn
2 cans whole corn
4 lg. potatoes, diced
1 lg. onion, diced
1 or 2 lg. cans tomato sauce
2 tsp. Tabasco sauce
Salt, pepper, garlic to taste Recipe
Cook chicken, pork, and beef, then add all ingredients. Cook on low heat for approximately 2 hours.
Add chicken broth as required. Add spices to
taste.
Yield: about 2 gallons.
NOTE: You would be surprised at how much better this would be if you first cooked all the meat on the grill.
