Vegetable Stew
1 large onion, quartered & thinly
1 tablespoon (15 ml) olive oil
2 garlic cloves, minced
2 cups (500 ml) zucchini, sliced
1 cup (250 ml) fresh fennel, diced
1 red pepper, cut into strips
1 green pepper, cut into strips
1 - 28 fl oz (796 ml) can tomatoes, diced
1 teaspoon (5 ml) fennel seeds
salt & pepper to taste
Recipe
In a dutch oven, saute the onion in the olive oil, until it is tender.
Stir the garlic, zucchini, fennel, red pepper, green pepper, tomatoes & fennel seeds into the dutch oven with the onion.
Simmer, uncovered, until the mixture is your desired consistency & the vegetables are tender; about 15 minutes.
Season with salt & pepper.
