    Mandarin Wild Rice Stuffing

    1 cup (250 ml) uncooked long grain rice
    1 cup (250 ml) uncooked wild rice
    1/2 cup (125 ml) butter, divided
    1/4 lb (115 g) fresh mushrooms, sliced
    1 medium onion, finely chopped
    2 cans mandarin orange segments, drained
    2 tablespoons (30 ml) orange rind, grated
    salt & pepper to taste

    Cook the long grain rice & wild rice separately, according to their package directions.

    In a large skillet over medium-low heat, melt 1/4 cup (60 ml) of the butter.

    Add the mushrooms & onion, then sauté.

    Remove them from the skillet.

    Add the remaining 1/4 cup (60 ml) of butter & melt it.

    In a large bowl, mix together the cooked long grain & wild rices.

    Pour the melted butter over the rice mixture, mixing well.

    Add the onion, mushrooms, orange segments & orange rind.

    Mix together gently.

    Season to taste with salt & pepper.

    Stuff your turkey just before roasting it.

    Any extra stuffing may be wrapped in foil wrap or placed in a covered casserole dish & baked in a preheated 350ºF (180ºC) oven for 35 to 40 minutes, or until heated through.
